Scones

Ingredients

  • 180g Unsalted Butter
  • 2tsp Baking Powder
  • 1/2 tsp salt
  • 700g Self Raising Flour
  • 100g Caster Sugar
  • 2tsp lemon juice
  • 360ml whole milk
  • 2tsp vanilla extract

Instructions

  1. Preheat the oven to 200C
  2. Heat the milk until just steaming, not too hot. Leave to cool slightly
  3. Put the flour, salt, baking powder and butter into a food processor and blend until breadcrumbs
  4. Pour into a bowl and stir in the sugar, then add the lemon juice
  5. Add the vanilla and the milk to the dry ingredients
  6. Mix the ingredients until it forms a dough
  7. Roll the dough out. 2cm thick for smaller scones and 4cm thick if you want bigger ones
  8. Cut out the dough in whatever shape you like
  9. Brush the tops with milk
  10. Bake in the oven for 12 minutes or until the tops start to brown slightly
